Mama Vezzani's Italian Bolognese Spaghetti Sauce

  • 1½ lb. ground beef
  • 1 large onion, diced
  • 4-6 cloves garlic
  • ¼ c olive oil
  • 3 cans (15½ oz) Italian style diced tomatoes
  • 3 cans (15½ oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 1 tsp. fennel seed
  • 1 tsp. Italian seasoning
  • Salt and pepper, to taste
  • 2 bay leaves
  1. Brown beef and drain well.
  2. Add olive oil, onions, and garlic and cook for 1-2 minutes. Be careful not to burn the garlic.
  3. Stir in fennel seed and Italian Seasoning (is using fresh basil, marjoram, and oregano, add it at the end).
  4. Add all tomatoes and bay leaves.
  5. Add salt and pepper, to taste.
  6. Simmer on low 30 minutes or longer, stirring occasionally.
  7. Use in Italian Lasagna or over spaghetti/pasta.
This makes A LOT of sauce!!! It is well worth the investment in time, though. I always use what is needed for dinner and then freeze the rest in quart sized freezer bags for future use.
