Portuguese Kale Sausage Potato Soup

Delightful soup with Portuguese kale, sausage, potatoes, corn and onion in a broth base!
Ingredients
  • 12 cups water plus 4 T chicken bouillon (or use 12 cups of chicken broth)
  • 1 bunch Portuguese kale, cleaned, stems removed
  • 1 12-oz. package smoked sausages, cut into chunks (I used beef little smokies)
  • 1-2 T dehydrated onions (or 1 large yellow onion, peeled and diced)
  • 6 medium to small white or red potatoes, peeled and diced
  • 1 16 oz. can whole kernel corn
  • Ground black pepper, to taste
  • Salt, to taste (I didn't need any in mine with the sausage and bouillon)
Instructions
  1. Put water and bouillon (or broth) into a large stock pot and bring to a boil.
  2. Add diced potatoes, sausage, onions, kale, and undrained corn to soup pot.
  3. Lower heat to medium low and simmer soup for about 10 minutes or until potatoes are tender.
  4. Salt and pepper, to taste.
  5. Serve warm.
Notes
You can also add garlic to the soup, if desired. Traditional Portuguese soup uses Linguica sausage. I used little smokies because I like the flavor and it was convenient to buy and chop.
