Peach and Boysenberry Crisp
Serves: 6-8
 
Delightful combination of peaches and boysenberries with a delicious crumb topping.
Ingredients
Filling:
  • 5-6 peaches, peeled, cored, and sliced
  • 1 c boysenberries
  • ½ c sugar
  • ¼ c cornstarch
Crumbly Topping:
  • 1 c flour
  • 1 c sugar
  • 1 tsp. baking powder
  • ¾ tsp. salt
  • 1 egg
  • ⅓ c shortening (or butter)
  • ½ tsp. cinnamon
Instructions
  1. Preheat the oven 350 degrees F.
  2. In a greased 6"x10" baking dish, mix together the fruit, sugar, and cornstarch.
  3. In a separate bowl, combine flour, sugar, baking powder, salt, egg, and shortening. Cut it together using a pastry cutter or knife and fork.
  4. Sprinkle crumbly topping all over the fruit mixture and sprinkle with cinnamon.
  5. Bake at 350 degrees F for 30-40 minutes or until the top is a light golden brown.
  6. Allow to cool for about 10 minutes before serving so that the juices can congeal.
  7. Serve with vanilla ice cream, if desired.
Notes
You can do any combination of fruit that you want. Just peaches or with apricots, plums, berries, etc. The combinations are endless!
