Quick and Easy Lunches - Marinated Vegetable Pasta Salad with Feta

Serves: 8 servings
  • 1 bag (1.1 lb.) of spiral pasta, cooked according to package directions
  • 1 large carrot, peeled and sliced thin
  • 1 head broccoli, chopped into bite-sized pieces
  • ½ head cauliflower, chopped into bite-sized pieces
  • 1 zucchini, chopped into bite-sized pieces
  • ½ large red onion, chopped
  • 4-6 radishes, thinly sliced
  • 1 celery stalk, chopped
  • 1 c cherry tomatoes, cut in half
  • 1 orange bell pepper, chopped
  • 1 cucumber, peeled and chopped
  • 8 T feta cheese, crumbled
  • 8 oz. lite Olive Garden Italian Dressing
  1. Cook pasta according to package directions.
  2. While pasta is cooking, wash and chop all vegetables.
  3. Drain cooked pasta and allow to cool for a few minutes.
  4. In a large glass bowl, mix together pasta and chopped vegetables.
  5. Pour 8 oz (add more or less as desired) of the lite Olive Garden Italian dressing over the pasta and vegetable mixture.
  6. Stir to coat evenly.
  7. Put in the fridge overnight (at least 4 hours) to marinate.
  8. Add feta cheese just before serving and stir together. Add more dressing, as desired, just before serving for added moisture.
  9. Serve cold and enjoy!
