Quick and Easy Lunches - Marinated Vegetable Pasta Salad with Feta

Serves: 8 servings
- 1 bag (1.1 lb.) of spiral pasta, cooked according to package directions
- 1 large carrot, peeled and sliced thin
- 1 head broccoli, chopped into bite-sized pieces
- ½ head cauliflower, chopped into bite-sized pieces
- 1 zucchini, chopped into bite-sized pieces
- ½ large red onion, chopped
- 4-6 radishes, thinly sliced
- 1 celery stalk, chopped
- 1 c cherry tomatoes, cut in half
- 1 orange bell pepper, chopped
- 1 cucumber, peeled and chopped
- 8 T feta cheese, crumbled
- 8 oz. lite Olive Garden Italian Dressing
- Cook pasta according to package directions.
- While pasta is cooking, wash and chop all vegetables.
- Drain cooked pasta and allow to cool for a few minutes.
- In a large glass bowl, mix together pasta and chopped vegetables.
- Pour 8 oz (add more or less as desired) of the lite Olive Garden Italian dressing over the pasta and vegetable mixture.
- Stir to coat evenly.
- Put in the fridge overnight (at least 4 hours) to marinate.
- Add feta cheese just before serving and stir together. Add more dressing, as desired, just before serving for added moisture.
- Serve cold and enjoy!
