This is a quick an easy healthy version of the chicken tender with an infused burst of Parmesan Cheese.
Ingredients
3 boneless, skinless chicken breasts
1 c Italian bread crumbs
1 tsp salt
½ c shaved Parmesan cheese
½ c milk
1 egg
Instructions
Pre-heat oven to 425 F.
Slice thawed chicken into evenly sized pieces.
In a separate bowl, mix together breadcrumbs, shaved Parmesan cheese, and salt. Set aside.
In a shallow bowl/dish, whisk together egg and milk.
Dip chicken pieces into milk mixture and roll in breadcrumb mixture, pressing Parmesan mixture into chicken pieces and then laying them on a jelly roll pan or baking stone.
Bake at 425 F for 10 min. Carefully flip over each chicken piece. Bake additional 5-10 min or until tenders are no longer pink on the inside.
Sprinkle with additional shaved Parmesan cheese and serve immediately.
