Potato Spinach Egg Scrambler
Serves: 8
 
Ingredients
  • 6-8 eggs
  • 1 bunch of fresh spinach (2-4 c, chopped)
  • 1 head of green garlic (or onion or shallots, diced small)
  • 1 c diced ham
  • 2 potatoes, peeled, cooked, and diced
  • salt and pepper, to taste
Instructions
  1. Crack eggs into a separate bowl, salt and pepper, and whisk together
  2. In a frying pan, add rest of ingredients.
  3. Saute in a little olive oil or butter until tender crisp.
  4. Add beaten eggs and cook just until set. The eggs will still be a little bit moist and shiny.
  5. Serve immediately and Enjoy!
Notes
You can substitute the ingredients for fresh vegetables you have on hand. I've used broccoli in place of spinach as well as kale and Swiss chard. I've also used shallots, yellow onions, or green onions. You can also use bacon or leave the meat out altogether. The possibilities are huge and it's a great way to include vegetables with your breakfast:)
